Ingredients
- 500 g (1 lb) ground lamb or beef
- 1 medium onion, finely chopped
- Salt, black pepper
- 1 tsp cinnamon (optional)
- 300 g (10 oz) sour cherries, pitted (fresh or frozen)
- 2 tbsp pomegranate molasses (or cherry molasses)
- 1 tbsp sugar (if cherries are too sour)
- 1 tbsp butter or ghee
- Toasted pine nuts (optional)
- Fresh parsley for garnish
Preparation
- Shape the kebabs: Mix meat, onion, spices. Form into small logs or balls.
- Cook the meat: Grill or pan-fry until golden brown.
- Make the sauce: Simmer cherries with butter, molasses, and sugar until thickened.
- Combine: Add kebabs to sauce, simmer for 5 more minutes.
- Serve hot, topped with pine nuts and parsley. Serve with flatbread or rice.
