Ingredients

  • 500 g (1 lb) ground lamb or beef
  • 1 medium onion, finely chopped
  • Salt, black pepper
  • 1 tsp cinnamon (optional)
  • 300 g (10 oz) sour cherries, pitted (fresh or frozen)
  • 2 tbsp pomegranate molasses (or cherry molasses)
  • 1 tbsp sugar (if cherries are too sour)
  • 1 tbsp butter or ghee
  • Toasted pine nuts (optional)
  • Fresh parsley for garnish

Preparation

  1. Shape the kebabs: Mix meat, onion, spices. Form into small logs or balls.
  2. Cook the meat: Grill or pan-fry until golden brown.
  3. Make the sauce: Simmer cherries with butter, molasses, and sugar until thickened.
  4. Combine: Add kebabs to sauce, simmer for 5 more minutes.
  5. Serve hot, topped with pine nuts and parsley. Serve with flatbread or rice.
