Cheese, tomatoes & basil salad
A fresh, colorful, and simple summer salad — perfect as a light appetizer or side dish during warm days.

Ingredients
- 200 g (7 oz) semi-firm cheese or mild washed-rind cheese (cut into cubes or thin slices)
- 3 to 4 ripe tomatoes (preferably heirloom), sliced
- A handful of cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- A few fresh basil leaves
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar or apple cider vinegar
- Salt and freshly ground black pepper, to taste
- (Optional) A handful of toasted pine nuts or pecans for crunch
Preparation
- Arrange the vegetables: On a large serving plate, layer the sliced tomatoes and cherry tomatoes. Top with red onion.
- Add the cheese: Distribute the cheese evenly over the vegetables.
- Season: Drizzle with olive oil and vinegar. Add salt and pepper to taste.
- Finish: Garnish with basil leaves and nuts if using.
- Serve fresh. Great with crusty bread or as a side to grilled meats or fish.
