Cheese, tomatoes & basil salad


A fresh, colorful, and simple summer salad — perfect as a light appetizer or side dish during warm days.

Ingredients

  • 200 g (7 oz) semi-firm cheese or mild washed-rind cheese (cut into cubes or thin slices)
  • 3 to 4 ripe tomatoes (preferably heirloom), sliced
  • A handful of cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • A few fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar or apple cider vinegar
  • Salt and freshly ground black pepper, to taste
  • (Optional) A handful of toasted pine nuts or pecans for crunch

Preparation

  1. Arrange the vegetables: On a large serving plate, layer the sliced tomatoes and cherry tomatoes. Top with red onion.
  2. Add the cheese: Distribute the cheese evenly over the vegetables.
  3. Season: Drizzle with olive oil and vinegar. Add salt and pepper to taste.
  4. Finish: Garnish with basil leaves and nuts if using.
  5. Serve fresh. Great with crusty bread or as a side to grilled meats or fish.
