Arugula and clementine salad

Ingredients

  • 4 cups of baby arugula, washed and wrung out
  • 1 cup of cherry tomatoes cut in half
  • 1 avocado cut into strips and drizzled with lime
  • 1/2 pound of akkawi cheese
  • 3 tbsp of Ionia extra virgin olive oil
  • 2 tbsp of wine vinegar
  • 1 clementine
  • Nuts, to taste
  • Salt

Preparation

  1. In a large bowl, mix all the vegetables and the cheese, except the avocados.
  2. In a small bowl, whisk together the vinegar, oil and pepper.
  3. Add the salad dressing and mix.
  4. Gently mix in the avocado strips.
