Refreshing Peach (or Nectarine), Mozzarella & Basil Salad


Servings: 2 people

Ingredients

  • 2 ripe but firm peaches or nectarines
  • 1 ball of mozzarella (or burrata for a creamier touch)
  • A few fresh basil leaves
  • A handful of arugula (or mixed baby greens)
  • 1 tablespoon olive oil
  • 1 teaspoon white balsamic vinegar (or lemon juice)
  • Salt & pepper to taste
  • (Optional) A few toasted pine nuts or crushed walnuts

Preparation

  1. Wash and thinly slice the peaches or nectarines (you can leave the skin on).
  2. Slice or tear the mozzarella.
  3. Arrange the arugula on a plate, then add the fruit slices and mozzarella.
  4. Top with fresh basil (chopped or whole leaves).
  5. Drizzle with olive oil and white balsamic vinegar. Season with salt and pepper.
  6. (Optional) Add toasted pine nuts or crushed walnuts for crunch.
  7. Add a few fresh raspberries or some mint leaves for an extra-refreshing twist!
