Refreshing Peach (or Nectarine), Mozzarella & Basil Salad
Servings: 2 people
Ingredients
- 2 ripe but firm peaches or nectarines
- 1 ball of mozzarella (or burrata for a creamier touch)
- A few fresh basil leaves
- A handful of arugula (or mixed baby greens)
- 1 tablespoon olive oil
- 1 teaspoon white balsamic vinegar (or lemon juice)
- Salt & pepper to taste
- (Optional) A few toasted pine nuts or crushed walnuts
Preparation
- Wash and thinly slice the peaches or nectarines (you can leave the skin on).
- Slice or tear the mozzarella.
- Arrange the arugula on a plate, then add the fruit slices and mozzarella.
- Top with fresh basil (chopped or whole leaves).
- Drizzle with olive oil and white balsamic vinegar. Season with salt and pepper.
- (Optional) Add toasted pine nuts or crushed walnuts for crunch.
- Add a few fresh raspberries or some mint leaves for an extra-refreshing twist!
