Grilled Rib Steak (Bone-In Ribeye) on the BBQ


Servings2 to 3 people (using a rib steak between 800 g and 1.2 kg / 1.75 to 2.5 lbs):

Ingredients

  • 1 bone-in rib steak (ribeye, about 800 g to 1.2 kg / 1.75 to 2.5 lbs)
  • 2 tbsp olive oil
  • 2 garlic cloves, minced (optional)
  • 1 sprig of fresh rosemary or thyme
  • Coarse sea salt
  • Freshly ground black pepper

Preparation

  1. Prepare the Meat : Take the steak out of the fridge 1 hour before grilling to let it come to room temperature. Rub with olive oil. Optionally rub with minced garlic. Season generously with salt and pepper, and add rosemary or thyme.
  2. Prepare the BBQ : Preheat the grill to create two heat zones: High heat zone for searing. Indirect heat zone for finishing the cooking.
  3. Grill the Steak : Sear the steak 2 to 3 minutes per side over high heat to get a good crust. Move it to the indirect heat side.
  4. Close the lid and cook to your desired doneness: Rare: 45 °C / 113 °F – about 8–10 min total ; Medium rare: 50–52 °C / 122–125 °F – about 12–14 min ; Medium: 56–58 °C / 132–136 °F – about 16–18 min ; Well done: 60+ °C / 140+ °F – over 20 min (Use a meat thermometer for accuracy)
  5. Rest the Meat : Remove the steak from the grill. Loosely cover with aluminum foil and let rest for 10 minutes before slicing.
  6. Serving Suggestions: Serve with chimichurri sauce, compound butter, or just a sprinkle of fleur de sel.
  7. Ideal sides: grilled potatoes, roasted vegetables, fresh salad.
